Coconut Chia Pudding with Jack-fruit Purée

This is so easy, it would be ridiculous not to give it a try! if you can't get Jack-fruit, any fresh fruit purée will do. 

So I've been generously given some ChiaBia sticks and decide to try my hands at something a little different.

It was delicious and filling...makes a great breakfast or post exercise treat.

Dairy-free, gluten-free, no-added sugar and delicious, I was happy with it and knowing all the goodness chia seeds have I was even happier to scoff the lot without any guilt.

Here's what I did...


Coconut Chia Pudding with Jack-fruit Purée

Ingredients
serves 2

Put all the ingredients in a large enough bowl and mix well, leave in the fridge overnight

Fruit Purée

Arrangement

Divide the set coconut chia pudding between two sundae glass or small bowl, leaving enough room at the top for the fruit purée.

Next add the fruit purée topping and enjoy.
