Vegan and Vegetarian Dry Curry

This is a great dish to serve up if you have vegan or vegetarians in the same house, granted there are some folks who won't even eat anything touched by animals but fear not! you can fry off the paneer and tofu separately and add the dry curry to them.

Process

place the potato cubes in a heat proof dish and microwave with half cup of water till soft, remove and drain water away leave to one side.

Set a large clean frying pan on medium heat, add some of the coconut oil, and the spices (cumin seeds, coriander, garam masala), allow them to infuse the oil.

Next add the shallots, paneer and tofu pieces. 

Fry till the shallot has soften and the paneer has taken on a golden, crisp finish, remove from the pan and set aside.

Add the rest of the oil to the pan with the potatoes, turmeric, garlic and ginger and fry till the potatoes take on color of turmeric and the garlic is soft.

Next add in the fresh and sun dried tomatoes, spinach and chili, stir well, cover and wilt the spinach for 2 minutes. 

Turn off the heat and add the previously cooked shallots and paneer to the tomato and potato mixture, stir well and serve.
